THE New Family Mom tended the Twins while Dad made ribs.
This particular version has Dad pressure cooking the ribs for fifteen minutes, then finishing them in the convection oven. While cooking, the collagen in the ribs turns to gelatin which can be combined with the BBQ sauce and painted on the ribs.
Yum.
Yeah, they are no baby back ribs. Too expensive! And not really worth the effort to do them right. And Dad gets greater satisfaction out of taking the least expensive meat he can find and making it into something wonderful. Pork was really cheap this summer, and these we on sale.
You can enhance this with a rub before painting and finishing them with rib sauce.
Much like painting, multiple thin coats layered onto the ribs produce a better result than one heavy coat. Mop a little on, bake, repeat. You'll appreciate the difference.

These were the less expensive store brand ribs. These could have benefited from a salt and sugar brine.
ReplyDeleteHormel brand does a pretty good job brining theirs, but for the price, these were less than $2 per lb., they were good enough.
